Ingredients
For the brioche toast
- 2 thick slices brioche, about 1 inch / 2.5 cm thick
- 20 g unsalted butter
- Pinch of fine sea salt
For the scrambled eggs
- 6 large eggs
- 2 tablespoons heavy cream
- 30 g unsalted butter
- Fine sea salt, to taste
- Freshly ground black or white pepper, optional
For the topping
- 40–60 g black caviar, preferably Oscietra
- 10–15 g fresh truffle, very thinly shaved
- Chives, finely chopped, optional
- Lemon zest, optional
- Crème fraîche, for serving, optional
Instructions
- Prepare the truffle.
Clean the truffle gently with a soft brush or barely damp paper towel. Shave it into very thin slices and set aside. Keep it at room temperature until ready to serve. - Toast the brioche.
Heat a skillet over medium-low heat. Melt 20 g butter, then toast the brioche for 2–3 minutes per side, until golden brown and crisp at the edges. Season with a tiny pinch of salt. Transfer to serving plates. - Whisk the eggs.
In a bowl, whisk the eggs with heavy cream until fully combined. Add only a small pinch of salt, since the caviar will provide most of the seasoning. - Cook the scrambled eggs.
Melt 30 g butter in a nonstick skillet over low heat. Add the egg mixture. Using a silicone spatula, slowly sweep and fold the eggs from the edges toward the center. - Remove from the heat early.
When the eggs are softly set but still glossy and slightly loose, remove the pan from the heat. Continue folding for 20–30 seconds with the residual heat. The eggs should be creamy, tender, and custard-like. - Assemble the toast.
Spoon the soft scrambled eggs generously over each piece of brioche. Arrange the caviar in a thick line down the center. - Finish with truffle.
Place shaved truffle slices over and around the caviar. Add a few chives or a light touch of lemon zest, if using. Serve immediately.
Chef’s Notes
- Keep the heat low when cooking the eggs. High heat creates dry, grainy scrambled eggs.
- Use minimal salt in the egg mixture; caviar contributes significant salinity.
- Do not cook the truffle. Its aroma is best preserved when shaved over warm eggs at the end.
- For the most elegant presentation, use a white plate and mound the eggs high before adding the caviar.
- If fresh truffle is unavailable, use premium truffle carpaccio or preserved truffle slices. Avoid adding more than a few drops of truffle oil.
Storage
This recipe is best eaten immediately. Caviar and truffle should not be reheated, and scrambled eggs lose their silky texture when stored.
Serving Suggestion
Serve with chilled Champagne, dry sparkling wine, black coffee, or sparkling water. A small spoonful of crème fraîche on the side adds a cool, tangy contrast to the richness of the caviar and eggs.
